Saturday mornings are one of my favorite mornings. I don't have to go to work. I can sleep in(which is only 7 but still). And not a care in the world. The husband and I both agreed to go to the gym as soon as we got out of bed. No relaxing, not even blinking an eye. Let's go. Ok!
After an excellent work out, we were hungry. We have made something similar like this before and I knew that it would be the prefect after work out brunch.
I only needed 1 egg and the husband wanted 2 but this recipe probably could serve 4 comfortably. Otherwise there are leftovers for tomorrow's breakfast!
1 sweet potato, diced
1 onion, diced
2 cloves garlic
1 pound Italian sausage
Salt and pepper
Heat a little bit of olive oil in sautè pan over medium heat and add sweet potato, onion and garlic. Cook until just about soft. Move to one side of the pan and add Italian sausage. Sprinkle Italian seasoning on sausage and cook until brown. Once browned, mix potato mixture and meat together.
Fry eggs in separate pan. Top hash with fried eggs. Serve and enjoy!
