Soup again? Yes, indeed.
Dice up onion and put into Stock pot with a little bit of olive oil. Throw in sliced peppers - I wasn't too concerned with the seeds so I left them. Put in cubed squash. Pour in Chicken broth. Let cook for an hour or until squash is cooked through. Stir occasionally.
Once cooked through, pour into a blender. Liquefy the soup mixture. Pour into soup bowls, top with Parmesan cheese. Serve and Enjoy!
