If there is one thing we like as much as Mexican food, it's probably Chinese food or anything of the Asian variety. While browsing Pinterest, I of course found a Fried Rice recipe but it didn't call for rice, it called for Cauliflower! Genius I thought. Let's make fried 'rice'. Now I know in typically fried rice, a person would be looking for chicken, peas and carrots. Well I definitely didn't want to do that.
Why didn't you want to make typically fried rice, you ask? Well today was a monday and I was inspired by a chef that I follow on Instagram to have a Meatless Monday. I read that it's not a bad thing to cut meat out of your diet at least once a week. Considering that eating a low-carb/paleo diet consists of a fair amount of meat, I had to do something different. I also can't remember where I read this but replacing meat with mushrooms is a good way to still have that protein without the meat. Well, here goes. Honestly, it turned out fantastic. It didn't look the most appealing and maybe that's just me needing to work on my picture taking skills.
I really liked this recipe because it was a great way to get in a ton of veggies into one meal. If you are a strict paleo, then look for stir fry veggies without the peapods and corn cobs. Also exchange out the Soy Sauce and use Aminos instead.
1 Bag frozen cauliflower, riced
1 container diced White mushroom. I used fresh because they taste better than canned
3 Cups Stir Fry Veggies
1 Onion, diced
2 Cloves Garlic
2 Tbls Olive Oil
2 Tbls Soy Sauce
Sautè Onion and garlic in olive oil in pan until slightly brown and translucent. Add stir fry veggies to pan and cook until heated through. Add chopped mushrooms.
Once all veggies are cooked through, move mixture to a side of the pan exposing an open area of the pan to cook the egg. Crack the egg in a separate bowl and slowly add to pan. Stir the egg while cooking to scramble egg. Once fully cooked, stir the egg with the entire mixture.
Add cauliflower and Soy sauce and stir. Cook until cauliflower is hot. Serve and Enjoy!
