Oh my! A few weeks ago, I made Paleo Buffalo Ranch Chicken Stuffed Peppers. I apparently haven't had time to put the recipe up yet. They were great. A very different take on Stuffed peppers. As I was prepping the Italian Meatballs, I knew I was going to make mashed cauliflower for my side. But then I remembered, ranch seasoning! This would be awesome!
I do have to apologize because I didn't think of making the ranch seasoning until after I took the ingredient picture. But it's pretty simple and better for you. Well at least I think so anyway. I am definitely going to keep this seasoning around for other meals. I may even try it with a mayo for my upcoming BLTs...what a great idea.
1 bag Cauliflower (12oz)
1 Tbsp Butter
1/2 tsp Parsley
1/2 tsp Chives
1/2 tsp Onion powder
1/2 tsp Garlic Powder
1/2 tsp dill
In a saucepan over medium heat with about a 1/2 cup water, cook the cauliflower until soft. Should take about 10 minutes.
While the cauliflower is cooking, add the ranch seasoning to a glass bowl. Once the cauliflower is cooked, transfer to the glass bowl. Drain out the extra water. Add butter.
With a hand mixer, beat cauliflower until smooth.
Serve and Enjoy!
