Beef Enchiladas

Tonight I wanted to make a little spin on an old favorite. Beef Enchiladas. The in-laws were driving through on their way back from Michigan and having a warm home cooked meal would be good. I like making enchiladas because they are actually pretty easy. The assembly is quick which makes it easy to place in the oven and forget about it for close to an hour while I finish picking up the house.

This May has definitely flown by. It's surprising how quick a month can go when the husband and I had two weddings to attend. The first one was out in Ann Arbor, Michigan and it was a beautiful weekend and a beautiful wedding. The husband was a groomsman and both the bride and groom looked gorgeous. A couple of friends of and I were able to take in some kayaking, sun and some good food and fun.

The in-laws took a couple extra days on their drive back to take in a few sites along the way.

Recipe: Beef Enchiladas

1 lb Ground Beef
10 Corn Tortillas
1 Can Mild Enchilada Sauce (Red)
16 oz Sour Cream
1 Medium Onion, chopped
2 Cloves Garlic
1 can Diced Green Chiles
2 Cups Shredded Mexican Cheese
1 Tbsp. Cumin
1 Tbpsp. Paprika
Cilantro for garnishing
Hot Sauce

Preheat oven to 350 degrees. In a saute pan, combine ground beef, chopped onion and garlic together. Once cooked through, add can of green chilis and spices.

Once the meat mixture is cooked through, take off the stove and start the assembly. Grease the pan first. Add about a tablespoon of beef in the middle of a tortilla. Sprinkle a little bit of cheese and roll up the tortilla and place seam side down in the pan. Continue until pan is full.

Add 1/2 cup of sour cream to the enchilada sauce in a mixing bowl and whisk together. Pour desired amount of sauce on top of the tortillas. Top with cheese and place in the oven for 45 minutes or until bubbly.

Serve with sour cream, hot sauce, lettuce and sprinkle cilantro on top. Enjoy!
