I was reading through some older posts and noticed that I am either really happy and want to bake or cook or that I've had a terrible day. Thankfully today was not that kind of day. Tomorrow is a co-worker's birthday so I thought it would be a great excuse to make some cupcakes. As I was thinking about what to make, I know she had mentioned something lemony and of course, I do love anything lemon. I know a lot of other people don't like lemon though so I didn't want to get carried away and that's why I decided on the white cupcakes instead.
I tried something different and wanted to enhance a cake box recipe with some simple add ins. I have made this recipe before and I just love how the cake turns out.
1 box White Cake Mix
1 cup Sugar
1 cup Flour
1/8 tsp Salt
1 Tbsp. Vanilla
1 cup Sour Cream
1 1/2 cup Water
Preheat oven to 350 degrees. In a standing mixer, beat eggs until fluffy and slowly add in water. Once combined and bubbly, add in Sour Cream and Vanilla. Mix until combined.
Sift Cake mix, sugar, flour and salt together and add to egg mixture. Beat thoroughly until all combined and not bumpy.
Using my pampered chef medium scoop, scoop one heaping scoopful into each lined cupcake pan. Or fill about 2/3 full.
Bake for about 23 minutes or until cooked through and slightly golden on top. Once out of the oven, flip then on a cooling rack.
Wait until cool to frost. You can use whatever kind of frosting you like but I used my Lemon Cream Frosting!
