If you are baking a cake or cupcakes or just needing some frosting that is light, fresh and delicious, then have I have something wonderful for you. I delicately frosted the white cupcakes with this frosting for my co workers birthday. What a hit! She really enjoyed them.
I bought already made lemon curd and if I could so this again I would make my own. It was good but I have experimented a little bit with making my own so I will do that next time.
6 oz softened cream cheese
2 sticks butter, softened
1/2 cup lemon curd
4 1/3 cup powdered sugar
In your handy dandy kitchen aid with the paddle attachment, beat butter until smooth and creamy. Be sure to scrape down the edges.
Add cream cheese and continue to beat until creamy. Then add the lemon curd.
Slowly add in powdered sugar, one cup at a time.
Frost on top of cooled cupcakes.
Serve and enjoy!
