Do you ever feel like you need just a little pick me up and not sure what to have? Well, I have something just for you. It's pretty close to a Larabar, if you are familiar. They have some really good flavors if you ever want to try them out.
The best part about this recipe is that it's super easy. The worst part? the reminder that I need a new food processor. When you read through the recipe below, I separated each ingredient in the food processor but if you have a processor bigger than 4 cups, then process it all together.
Now to figure out if I should be saying "APE-ricot" or "APP-ricot".
2 cups dried apricots
2 cups toasted pecans
1 tsp salt
1 Tbsp. cinnamon
Preheat oven to 350 degrees and line 8x8 pan with parchment paper. Toast pecans in an skillet over medium high heat until fragrant.
Coarsely chop pecans in processor and pour into mixing bowl. Set aside. Coarsely chop apricots in processor. Add to pecans in mixing bowl. Mix together apricots and pecans. Process eggs, vanilla, salt and cinnamon until thoroughly mixed through.
Add to apricot and pecan mixture and stir until mixed all the way through. Smooth mixture into the 8x8 pan. Bake for 25 minutes. Serve and enjoy!
