New Year - New Recipes. I was inspired by a Paleo blog that I follow and found a meatloaf recipe featuring none other than the wonderful flavors of Pizza! I had to jazz this recipe and make it.
Going back a few months, my brother's friend's dad was cutting up some cows and my brother asked if we wanted some ground beef. Sure I said! How much he said... uh, how about 50 pounds. Ok! 50 pounds? Really Melody? What are you going to do with 50 pounds of beef? But it's not just any beef, it's rather delicious and made from all the meat parts of a cow instead of the remaining cuts or whatever. I don't know much about beef but this is quite good. But going back to 50 pounds, what in the world were we going to do with that much ground beef. My answer, make meatloaf. Real genius thinking.
So going back to the inspiration I found, Pizza Meatloaf. I wanted to make sure it had all the good favors of our favorite pizza. Sausage, pepperoni, mushrooms, peppers.
1 lb ground beef
1 lb ground pork
1 package pepperoni
1 container mushrooms
3 sweet peppers
1 can pizza sauce
Preheat oven to 350 degrees. Line a cookie sheet with foil. I used my pamper shelf baking sheet. In a mixing bowl, mix together the ground beef and pork. Add diced sweet peppers, mushrooms, pepperoni and onion. Pour in half the can of pizza sauce. Add 2 tablespoons of Italian Seasoning. Mix all together then add whisked eggs and combine again.
Shape meat mixture into four loaves. Carefully spoon a little pizza sauce on top of the formed loaves. Place pepperonis on top. Bake at 350 for 1 hour or until cooked through.
